Position: Sous Chef

The University of Maine Dining Services has three (3) openings for Sous Chefs in our residence and retail operations on the Orono campus. The Sous Chefs report to the senior manager in their operation, usually the Dining Service Area Manager or Associate Director; is responsible for planning, preparing, managing & overseeing the daily preparation, production and presentation of all menu selections at a Dining Services operation and department events. Focus on ensuring a quality dining experience through education, skill enhancement and training of all production staff. Incumbent is expected to work as an individual, as well as a team member. Responsibilities include directing and organizing the food production staff utilizing current culinary techniques in production, presentation and service to assure quality; actively participate in menu development and product election as a member of a campus culinary team; daily training of food production staff, plan and organize culinary training programs. Individual must have a culinary degree from an accredited culinary program or Bachelor's degree with focus on culinary and management curriculum. Demonstrated commitment to total quality management, supervisory experience, excellent oral and written communication skills. Five years of experience, two as a Sous Chef at a college, university, restaurant, hotel or conference center preferred. Knowledge of a menu management system, and spreadsheet applications are preferred. Individual must have an ability to do frequent lifting and standing and must also successfully complete a pre-employment physical and credit background check.
