Steaks and suds are the mainstays at Hops Restaurant Bar and Brewery, a subsidiary of Avado Brands (formerly Apple South). Hops operates a chain of about 75 of the casual-dining restaurants with on-site microbreweries. Patrons can feast on selections including steak, chicken, pasta, burgers, and salads, and wash them down with one of Hops' custom ales and lager-style beers. (Hops serves only its own private-label brews.) Observation microbreweries allow customers to watch the brewing of Hops' original beers, such as Clearwater Light, Lightning Bold Gold, Hammerhead Red, and Alligator Ale. The company operates primarily in the southeastern US, but is expanding throughout the East and Midwest .
