Managers just getting into the restaurant business need to
understand that it is important to know your "segment"
of the foodservice industry well before beginning your career. The
reason is simple; managers tend stay within their starting
segment. Quick service managers tend to stay in quick service;
full service managers tend to stay in full service, and so on.
But even though there is a tendency to stay, there are other
options that you would be very happy in, but few know they exist.
Don't feel trapped into thinking you must stay and be miserable or
that you must leave the industry entirely to start over. You
don't. The foodservice industry is rich and diverse, and your
